摘要
鸡蛋中兽药残留量超标是鸡蛋抽检不合格的重要原因之一。长期食用含兽药的鸡蛋,会对人体直接产生毒性作用,引起细菌耐药性增加,还通过对环境和食物链间接影响而潜在威胁人体健康。现阶段抽检中动物源食品中兽药残留检测技术前处理操作复杂、检测精确度、检测范围局限等方面均存在不足之处,因此急需研发前处理操作简便高效、提高检测精准度、成本低廉且可同时检测多种兽药残留的技术,这对监测鸡蛋中的兽药残留问题具有重要意义。本文汇总了近几年我国鸡蛋样品抽检结果及兽药残留情况,就目前国内市场抽检鸡蛋时使用的兽药残留检测方法进行了介绍和分析,并对鸡蛋中兽药残留检测新技术的研究方向进行了展望,期望能为鸡蛋中兽药残留检测工作提供一定的理论参考。
The excess of veterinary drug residue in eggs is one of the important reasons for unqualified egg sampling. Long-term consumption of eggs containing veterinary drugs will directly produce toxic effects on human body, resulting in increased bacterial resistance, and potentially threaten human health through indirect effects on the environment and food chain. At present, the detection technology of veterinary drug residues in food of animal origin has some shortcomings in the aspects of complex pretreatment operation, detection accuracy, limited detection range and high-throughput analysis. Therefore, it is urgent to develop a technology with simple and efficient pretreatment operation, improved detection accuracy, low cost and simultaneous detection of multiple veterinary drug residues. This is of great significance for monitoring the problem of veterinary drug residues in eggs. This paper summarizes the recent result of sampling observation of egg samples and veterinary drug residue in our country, the current domestic market sampling observation of eggs of veterinary drug residues detection method is introduced and analyzed, and the eggs in the veterinary drug residue detection new technologies research direction was discussed, for eggs in the veterinary drug residue detection work provide certain theoretical reference.
