摘要
研究常见食品中甲醛本底值,为制定科学判定依据提供数据基础和技术支撑。分别采集350批次未经处理和市售的畜禽副产品、水产品、食用血制品,利用柱前衍生-高效液相色谱法测定其甲醛本底及含量。研究中所采集的样品均存在甲醛本底,平均本底值在0.536~1.26 mg/kg之间;市售食品均检出甲醛阳性样品,甲醛测定平均值在2.22~25.9 mg/kg之间,最大检出值为355 mg/kg。样品中是否非法添加甲醛,需根据甲醛检出值、甲醛本底值和甲醛使用目的等因素综合判断。
To offer data and techniques for making scientific judgment, the formaldehyde background of food was studied.350 untreated samples and 350 samples from markets were collected, their formaldehyde background and formaldehyde content was analysed by high performance liquid chromatography with pre-column derivatization.Formaldehyde background was found in all samples with the average value of 0.536~1.26 mg/kg, formaldehyde positive samples were found in food from markets, and the average content was 2.22~25.9 mg/kg, the maximum content was 355 mg/kg.To judge if formaldehyde was added in food deliberately, the content, the background and the purpose of using formaldehyde should be comprehensively considered.
