中药型环保梨用保鲜剂的初步研究

摘要 目的加强梨的保鲜作用,改变目前市场现有保鲜剂产品毒性大、成本高的现状,弥补缺乏安全、无毒、绿色的梨用保鲜剂的缺陷。方法以纯度98%以上的魔芋葡甘露聚糖作为原料,回流提取法提取高良姜挥发油,醇提煎煮法提取高良姜中的黄酮等其他活性成分,提取结束后对两者用量进行考察,并与适量的蔗糖脂肪酸酯、柠檬酸和水加热混匀,制成梨用保鲜剂备用。结果通过软化腐烂率、质量损失率、褐变指数、维生素C含量等评价指标,发现保鲜剂具有很好的保鲜效果。结论使用成本低廉、无毒无害的成分制作出了一种易溶于水、防腐抗菌、天然环保的中药型梨用保鲜剂。 Objective To keep the freshness of pears,change the use of high toxicity and high cost of fresh-keeping products in the market by replacing with safe,non-toxic and green ones.Methods Konjac glucomannan with purity of more than 98%was used as raw materials,refluxing extraction was used to extract the volatile oil,while galangal alcohol extraction decoction method was used to extract flavonoids and other active ingredients in galangal.After the extraction,the dosage was examined,and with the right amount of sucrose fatty acid ester,citric acid and water heating blender,the antistaling agent for pears was made.Results The effect of the preservative was evaluated by softening and decay rate,mass loss rate,browning index and vitamin C content.Conclusion A natural and environment friendly pear preservative is prepared with low cost,and non-toxic ingredients.
