摘要
以桑枝屑为主原料栽培云耳百云6号,获得的子实体营养丰富、富含各种生物活性物质、富有弹性,口感嫩脆鲜香、食用安全。成分检测与分析结果发现云耳百云6号子实体具有以下特点:①营养和矿质元素非常丰富,其中,蛋白质、脂肪、粗纤维含量分别为11.4、0.6、4.64 g/100 g,钾、钙、磷、镁、钠含量分别为1760、563、291、189、34.05 mg/100 g;②富含18种氨基酸,总氨基酸(total amino acids,TAA)含量为8.329 g/100 g,其中必需氨基酸含量占42.61%、药用氨基酸占60.51%、鲜味氨基酸占35.18%,色氨酸可能是云耳特征性或标志性成分;③含有脂溶性V_(A)、V_(E)和水溶性V_(B1)、V_(B2)及烟酸(V_(B1)),其中,烟酸含量最高,达5700 μg/100 g,分别是V_(B2),V_(B1)、 V_(E)含量的28.36、90.20、896.23倍;④生物活性物质含量丰富,其中,多糖和果胶的含量分别为11.6 g/100g和10.8 g/100 g,甘露醇、总嘌呤、鸟嘌呤核苷酸、总黄酮含量也分别达到540、58.7、3.66、3.22 mg/100 g,另外还含有少量的单宁和β-胡萝卜素;⑤有害成分均低于标准规定,完全达到国家规定的绿色食品标准要求。
The fruiting bodies of Auricularia auricula Baiyun No.6 cultivated with mulberry branch shavings as the main raw material are rich in nutrients.The various bioactive substances are elastic,tender,crispy and fragrant,and safe for consumption.Testing and analysis of the ingredients of fruiting bodies of Baiyun No.6 revealed several features.First,enriched nutrients included protein,fat,and crude fiber(11.4,0.6 g/100 g,and 4.64 g/100 g,respectively).Enriched elements included potassium,calcium,phosphorus,magnesium,and sodium(1760,563,291,189 mg/100 g,and 34.05 mg/100 g,respectively).Second,18 amino acids were enriched,with the total content reaching 8.329 g/100 g.Of these amino acids,42.61% were essential amino acids,60.51% were medicinal amino acids,and 35.18%were fresh amino acids(with some amino acids having more than one ofthese attributes).Tryptophan was implicated as a characteristic or iconic component of black fungus.Third,fatsoluble vitamins includedAandE.Water-soluble vitamins includedV_(B1),V_(B2),.and niacin(V_(B3)).Niacin content reached 5700 μg/100 g,which was 28.36,90.20 and 896.23 times the contents of V_(B2),V_(B1),and V_(E),respectively.Fourth,fruiting bodies were enriched in bioactive substances.The polysaccharide and pectin content was 11.6 g/100 g and 10.8 g/100 g,respectively.The mannitol,total purine,guanine nucleotide,and total flavonoid content reached 540,58.7,3.66 mg/100 g and 3.22 mg/100 g,respectively.Small amounts of tannin and β-carotene were detected.Finally,the contents of harmful components were lower than the stipulated standards.The fruiting bodies fully met the national green food standards.
