烟台市2021年食品风险微生物及致病因子污染现状分析 被引量:2

Analysis of the Current Situation of Food Risk Microorganisms and Pathogenic Factors Contamination in Yantai City in 2021

摘要 目的:调查烟台市2021年食品风险微生物及致病因子污染现状。方法:在烟台市各区超市、农贸市场、餐馆等场所进行随机抽样,对所抽样的食品进行微生物及致病因子检测。包括沙门菌、金黄色葡萄球菌、单核细胞增生李斯特菌、霍乱弧菌、溶藻弧菌、致泻性大肠埃希菌、甲肝病毒和异尖线虫。结果显示,2021年共采集4类食品,500份样本,总检出率为22.40%,其中沙门菌18份、副溶血弧菌5份、单核细胞增生李斯特菌7份,致泻性大肠埃希菌16份、异尖线虫66份。在水产品、生食蔬菜、鱼类的检出率分别为5.00%、27.33%、44.00%,结论:烟台市食品存在不同程度的污染,水产品、蔬菜水果及鱼类具有较高的检出率,主要污染为沙门菌、金黄色葡萄球菌、单核细胞增生李斯特菌、异尖线虫等。为保证烟台市食品安全,应当加强食品监管,保证食品的安全性。 Objective:To investigate the current situation of food risk microorganisms and pathogenic factor pollution in Yantai City in 2021.Methods:Random sampling of food samples in supermarkets,farmers’markets,restaurants and other places in Yantai City was carried out to detect microorganisms and pathogenic factors.These include salmonella,Staphylococcus aureus,mononucleosis listeria,Vibrio cholerae,algal vibrio,laxative E.coli,hepatitis A virus,and isotropic nematodes.Results:A total of 4 types of food products were collected in 2021,with a total detection rate of 22.40%,of which 18 were salmonella,5 were paralytic vibrio,7 were mononucleocyt-hyperplic leptin,16 were laxative E.coli and 66 were heterotropic nematodes.In aquatic products,raw vegetables,fish detection rate of 5.00%,27.33%,44.00%,conclusion:Yantai City food pollution of different degrees,aquatic products,fruits and vegetables and fish have a high detection rate,the main pollution for salmonella,Staphylococcus aureus,mononucleosis listeria,isothal nematodes and so on.In order to ensure food safety in Yantai City,food supervision should be strengthened to ensure food safety.
