饲料及动物源食品中重金属检测技术的研究进展 被引量:13

摘要 随着全球现代工业的快速发展,重金属(包括铅、镉、汞、砷、铬、铜、锌等)污染环境的问题受到了越来越多的社会关注,它们会随着食物链不断富集,最终引发食品安全问题,对人和动物的身体健康造成极大威胁。各类饲料、动物源食品中重金属检测的需求日益增加,要求也不断升高,发展便捷、高效、可靠的重金属检测技术可为饲料和食品中重金属监管做出有力的保障。本文综述了近年来国内外报道的含重金属样品的前处理技术和检测方法及其在饲料和动物源食品中的应用,主要介绍了仪器检测和快速检测两大类方法,并对其应用情况、优缺点进行了综合比较和分析,在此基础上对未来重金属检测技术的发展大方向进行了展望。 With the development of modern industry,contamination of heavy metals(lead,cadmium,mercury,arsenic,chromium,copper,zinc,etc.)has attracted more and more attention.With the continuous enrichment of metal ions through food chains,they will eventually lead to food safety issue and pose a threat to public health.The demand for detection of heavy metals in various feeds and animal-origin foods is urgently increasing.Developing convenient,efficient and reliable heavy metal detection technology can provide a powerful guarantee for heavy metals monitor in food.In this paper,the pre-treatment technologies and detection methods of heavy metals in feed and animal-origin foods reported in recent years are reviewed.The application of instrumental detection methods and rapid detection methods are introduced,and their advantages and disadvantages are compared.On this basis,perspectives of future heavy metal detection research are discussed.
