摘要
3D打印技术作为一种新型智能化制造技术,被逐渐广泛应用于各类生产制造领域;在食品加工领域中, 3D打印技术可满足不同人群对食品外观形貌的个性化定制及饮食健康等方面的需求。阐述主流3D打印技术在各领域中应用情况,分别针对不同食品3D打印原理进行介绍,并对各种3D打印食品技术的发展现状和挑战进行阐述与分析,总结分析现阶段3D打印食品存在的挑战,并有针对性地对3D打印技术在食品加工领域中的应用前景进行展望,以期为3D打印技术在食品加工领域中的推广应用提供科学理论基础。
As a new type of intelligent manufacturing technology, 3 D printing technology has been widely used in various fields of production and manufacturing. In the field of food processing, 3 D printing technology can meet the needs of different people on the personalized customization of food appearance and diet health. Describe the application of mainstream 3 D printing technology in various fields, respectively introduce the principles of different food 3 D printing, and expound and analyze the development status and challenges of various 3 D printing food technology. Summarize and analyze the challenges of 3 D printing food at this stage, and make targeted development of 3 D printing technology in the field of food processing.Hope to provide a scientific theoretical basis for the promotion and application of 3 D printing technology in the field of food processing.
