摘要
黄原胶生产过程中的副产物豆渣仍含有大量未被利用的营养物质,造成了资源的浪费。利用单因素实验和正交实验确定蛋白回收的最佳条件:酶解温度50℃,酶解时间5 h,最佳复合酶为碱性蛋白酶和纤维素酶复配,最佳酶使用量为4%。该条件下,大豆蛋白的回收率可达90%以上。将回收的大豆蛋白用于黄原胶发酵,对黄原胶的产胶及转化率无影响,但可提高黄原胶的黏度。
As a by-product of xanthan gum fermentation,bean dregs still contain a large amount of unused nutrients,resulting in a waste of resources.Single factor test and orthogonal test were used to determine the best conditions for protein recovery,which are 50℃enzymolysis temperatureand 5 h enzymatic hydrolysis time.The best complex enzyme is the complex of alkaline protease and cellulose,and the optimum enzyme dosage is 4%.Under these conditions,the recovery rate of soybean protein can reach more than 90%.When the recovered soybean protein was used in xanthan gum fermentation,the yield of xanthan gum and the conversion of soybean were not affected,but the viscosity of xanthan gum was improved.
