唐代陆羽在《茶经》中写道:"茶者,南方之嘉木也。"在《尔雅》一书中,"嘉,善也"。古代"嘉"与"佳"同用,"佳"是美好。因此,茶树,是我国南方一种似上善若水的美好之树木。《茶经》又说:"茶之为饮,发乎神农氏,闻于鲁周公。"神农氏是古代传说中的"三皇"之一(伏羲、女娲、神农氏),"三皇"先于"五帝"(太皞、炎帝、黄帝、少皞、颛顼),我们常说炎黄子孙五千多年,那么神农氏更早。
