摘要
肉制品是人们日常膳食结构中不可或缺的食物,畜禽肉的营养价值较高,饱腹作用强,可加工烹制成各种美味佳肴,是一种食用价值很高的食物。随着人们对其由需求型到质量型的转变,此类食品安全问题已逐渐成为大众关注的焦点。肉制品的重金属污染主要受到畜禽生活环境、饲养环境的影响。本文综述了肉制品中重金属污染及兽药残留的研究进展,介绍了其主要来源、现状和危害,重点阐述了肉制品中重金属污染及兽药残留的危害,以期为环境治理、标准完善提供参考。
Meat products are indispensable food in People’s daily dietary structure.Livestock and poultry meat has high nutritional value and strong satiating effect.It can be processed into various delicacies and has high edible value.With the change from demand-oriented to quality-oriented,such food safety issues have gradually become the focus of public attention.The heavy metal pollution of meat products is mainly affected by the living environment and feeding environment of livestock and poultry.This paper reviewed the research progress of heavy metal pollution and veterinary drug residues in meat products,introduced the main sources,current situation and harm of heavy metal pollution and veterinary drug residues in meat products,and emphasized the harm of heavy metal pollution and veterinary drug residues in meat products,so as to provide references for environmental control and improvement of standards.
