摘要
臭氧冰具有保鲜、抗菌功能,并有极长的半衰期,可以保存和运输,但通常情况下制备的臭氧冰中臭氧含量较低,严重影响其应用。利用自制臭氧水发生装置低温条件下制取高浓度臭氧水,探究水温、pH、冻结温度以及制冰模具对臭氧冰中臭氧浓度的影响。结果表明:臭氧水温度为5℃、pH为3、冻结温度为-40℃、制冰模具为4×4 cm包装袋时,臭氧冰中臭氧保存率可达46.01%。通过降低水温和调节pH来提高臭氧水稳定性同时选用合适制冰模具阻止臭氧逸散能显著提高臭氧冰中臭氧保存率。
With the function of fresh-keeping and anti-bacterial,ozone ice has an extremely long half-life and can be stored and transported,but the ozone content in ozone ice prepared under normal circumstances is very low resulting in its limited application.A self-made rig for ozone water preparation is successfully used to produce high-concentration ozone water,and the influence of water temperature,pH,freezing temperature and ice making molds on the ozone concentration in ozone ice is also investigated.The results show that the ozone preservation percentage in ozone ice can reach 46.01%when the ozone water temperature is 5℃,the pH is 3,the freezing temperature is-40℃,and the ice making mold is a 4×4 cm bag.It can significantly improve the ozone preservation percentage in ozone ice enhancing the stability of ozone water by reducing the water temperature and adjusting the pH of stated ozone water in advance,and then choosing suitable ice-making molds to prevent ozone escape.
