Research progress of Longjing tea processing technology

摘要 龙井茶久负盛名且产品价值高,伴随着龙井茶产业不断发展,其制茶工艺逐步完善,初制和精制加工技术得到不断提高。本文综述了我国龙井茶手工炒制、机械加工、机手结合加工以及精制加工技术等应用现状,分析这些加工技术的特点以及创新发展趋势,旨在为进一步提升发展龙井茶产业提供理论帮助。 Longjing tea is one of the most famous teas in China and the product is high valued. With the development of Longjing tea industry, the tea making process is gradually ameliorated, and the primary processing and refining technology are constantly improved. In this paper, the application status of Longjing tea processing technology is summarized, including manual processing, mechanical processing, combined processing of hand and machine, as well as refined processing. The characteristics of these processing technologies are also analyzed, in order to provide theoretical help for further promoting and development of Longjing tea industry.
