摘要
随着葡萄酒市场的逐步扩大,葡萄酒的掺假及产地误标现象时有发生。因此,葡萄酒的真实性也变得尤为重要。稳定同位素技术作为食品的天然指纹具有分析速度快、精密度高、效果显著等优势,近年来也被广泛应用于各地名优特色农产品的产地溯源。本文阐述稳定同位素的基本原理,综述产地溯源中碳、氧、氢、铅、锶等几种常用同位素的变化机理以及在葡萄酒产地溯源方面的研究进展,为促进葡萄酒产地追溯制度的建立与完善提供参考。
With the gradual expansion of the wine market,the phenomenon of wine adulteration and origin mislabeling is becoming more and more serious.Therefore,the authenticity of wine has become particularly important.As a natural fingerprint of food,stable isotope technology has advantages such as fast analysis speed,high precision and remarkable effect,etc.In recent years,it h as also been widely used in the origin tracing of famous and excellent agricultural products.In this paper,the basic principle of stable isotopes,the mechanism of changes of several common isotopes,such as carbon,oxygen and hydrogen,lead and strontium,and the research progress on the origin of wine were reviewed.It was to provide a reference for promoting the establishment and improvement of the traceability system of wine origin.
