Research on the Quality of Lingqiu Green Back Goat

摘要 灵丘青背山羊是山西省优良地方品种,具有独特的种质资源优势及功能。为深入挖掘灵丘青背山羊种质资源优势,对灵丘青背山羊、晋岚绒山羊、杜寒杂交绵羊3个不同品种羊的屠宰性能、肉品质特性、氨基酸含量和脂肪酸含量进行了测定分析。结果表明:屠宰性能方面,灵丘青背山羊的眼肌面积显著高于其他两个品种(P<0.05);常规营养成分中,灵丘青背山羊肉的粗蛋白质、粗脂肪含量显著高于晋岚绒山羊和杜寒杂交绵羊(P<0.05);灵丘青背山羊的剪切力显著低于其他两个品种(P<0.05);在背最长肌中,灵丘青背山羊的肉色亮度值L*、红度值a*和黄度值b*均低于其他两个品种;灵丘青背山羊肉的蒸煮损失显著高于其他两个品种(P<0.05),失水率显著高于晋南绒山羊(P<0.05),pH值低于其他两个品种(P>0.05);氨基酸测定中,灵丘青背山羊羊肉氨基酸总量、必需氨基酸含量均高于其他两种羊,其必需氨基酸占氨基酸总量的比值0.42,略高于FAO/WHO模式提出的标准0.4,必需氨基酸与非必需氨基酸的比值0.72,显著高于FAO/WHO模式提出的标准0.6;脂肪酸测定中,灵丘青背山羊肉中单不饱和脂肪酸含量>饱和脂肪酸含量>多不饱和脂肪酸含量,不饱和脂肪酸含量高于晋岚绒山羊和杜寒杂交绵羊。说明灵丘青背山羊肉是具有蛋白质含量高、氨基酸含量丰富、肌肉嫩度高等特点的优质蛋白质来源肉类。 As an excellent local breed in Shanxi province,Lingqiu green back goat has its own unique germplasm resource advantage and function.In order to further explore the germplasm resources advantage of Lingqiu green back goat,the research on meat quality was carried out in this paper.In this study,the slaughter performance,meat quality,amino acid content and fat acid content of Lingqiu green back goat,Jinlan cashmere goat and Duhan sheep of three different breeds were measured.The results showed as follows:in slaughter performance,the eye muscle area of Lingqiu green back goat was significantly higher than that of the other two breeds.The protein and fat of Lingqiu green back goat mutton was significantly higher than that of Jinlan cashmere goat and Duhan sheep(P<0.05).The shear force of Lingqiu green back goat was lower than that of the other two breeds(P<0.05).In the longissimus dorsi,the meat color L*,a*and b*of Lingqiu green back goat were lower than those of the other two breeds.The water loss rate and cooking loss of Lingqiu green back goat were higher than the other two breeds,and the pH value was lower than the other two breeds.Determination of amino acids,Lingqiu green back goat mutton(TAA)total amino acids,essential amino acids(EEA)content is higher than the other two breeding sheep,Lingqiu green back goat of EEA/TAA the ratio of the total amino acids is 0.42,slightly higher than the model proposed by the FAO/WHO standard 0.4,EEA/NEAA is 0.72,significantly higher than model proposed by the FAO/WHO standard 0.6.The content of monounsaturated fatty acids>saturated fatty acids>polyunsaturated fatty acids and unsaturated fatty acids in Lingqiu green back goat mutton were higher than those in Jinlan cashmere goat and Duhan sheep.It was conduded that Lingqiu green back goat mutton was a high quality protein source meat with high protein content,rich amino acid content and high muscle tenderness.
