摘要
吡嗪是白酒中重要的风味化合物,也是白酒的一类功能化合物。采用气相色谱四级杆串联质谱选择监测模式(SRM模式)对白酒中吡嗪类化合物进行研究,实验采用直接进样,能最大限度减小目标化合物的损失,同时能缩短前处理时间。5种吡嗪类化合物在相应的浓度范围内呈现良好的线性关系,相关系数均大于0.99,回收率在98.52%~103.46%,相对标准偏差(RSD)在0.28%~3.14%,检出限(LOD,S/N=3)在10~14μg/L。该方法成本低、灵敏度可靠,能检测到较低浓度的吡嗪化合物,适用于白酒中5种吡嗪类化合物的定量检测,同时不需前处理,适用于检验所或企业等的批量检测。
Pyrazine is a kind of important flavoring and functional compound in Baijiu.In this study,pyrazines in Baijiu were studied by gas chromatography four-stage tandem mass spectrometry(SRM mode).Direct injection was adopted to minimize the loss of the target compounds and to reduce the pretreatment time.The linear relationship of the five pyrazines was good in the corresponding concentration range,the correlation coefficient was more than 0.999,the recovery was between 99.52%to 103.46%,the relative standard deviation(RSD)was between 0.28%to 3.14%,and the detection limit(LOD,S/N=3)was between 10μg/L to 14μg/L.The method has the advantages of low cost,reliable sensitivity and low detection limit.It is suitable for the quantitative detection of the five pyrazines in Baijiu without pretreatment,and is more suitable for batch detection in inspection institutes or enterprises.
