摘要
【目的】研究粒度及粒重对"云谷1号"黑米总花色苷含量的影响。【方法】利用萃取法提取黑米花色苷,用pH示差法测定溶液吸光度值,用统计学方法进行分析。【结果】云谷1号总花色苷的含量与粒度和粒重极显著正相关(P<0.001)。粒厚、粒重和粒宽是影响总花色苷含量的重要因素,粒厚超过1.80 mm后,总花色苷含量的差异不显著,厚度1.70~1.80 mm的籽粒处于中间过渡态。利用偏最小二乘分析提取一个新的综合变量,分别解释了96.3%的自变量变异和78.8%的因变量变异,预测率为77.1%。【结论】粒度和粒重不仅影响稻米的外观品质和物理特性,而且还与某些营养成分的含量密切相关。
【Objective】The purpose of this paper is to study the effect of grain size and weight on the total anthocyanin content(TAC)of‘Yungu No.1’.【Method】Anthocyanins from black rice were extracted by extraction method,and the absorbance value of solution was determined by pH differential method.Date analysis was carried out by statistical method.【Result】There were significantly positive correlations between TAC of black rice and grain size and weight(P<0.001).Grain thickness had the highest correlations with TAC,followed by grain weight,width and finally the length.The difference of TAC was not obvious when grain thickness exceeded 1.80 mm,and there was an intermediate transition state which the thickness between 1.70 to 1.80 mm.A new comprehensive variable was extracted by the Partial Least Squares(PLS)analysis,which explained 96.3%of the x-variability and 78.8%of the y-variance,respectively,and the prediction rate for TAC was 77.1%.【Conclusion】Grain size and weight not only affect the appearance quality and physical properties of rice,but are also closely related to some nutrient contents.
