摘要
为评价不同水域中华绒螯蟹Eriocheir sinensis雄体的营养品质及其风味物质含量的差异性,采用生化分析方法,对长江固城湖、阳澄湖水域、辽河(入海口)和黄河(中上游)等水域中华绒螯蟹雄体蟹膏和肌肉中的基本营养成分,以及矿物质元素、脂肪酸、氨基酸、核苷酸和胆固醇等营养物质的含量进行检测和对比分析。结果表明:长江固城湖、阳澄湖、辽河(入海口)和黄河(中上游)等水域的中华绒螯蟹雄蟹在矿物质、氨基酸和胆固醇等营养成分组成上有显著性差异(P<0.05);辽河水域雄蟹蟹膏中铁元素含量最高,为284.3 mg/kg,显著高于其他3个水域(P<0.05);长江固城湖水域雄蟹可食部中锌元素含量最高,为63.5 mg/kg,显著高于黄河水域和阳澄湖水域(P<0.05);固城湖水域雄蟹可食部中多不饱和脂肪酸(PUFA)含量最高且显著高于其他3个水域(P<0.05);固城湖和阳澄湖水域雄蟹中氨基酸含量(呈味氨基酸、必需氨基酸及总氨基酸)显著高于黄河、辽河水域(P<0.05);辽河水域雄蟹蟹膏中肌苷酸(IMP)含量最高(P<0.05)。研究表明,不同水域中华绒螯蟹雄体可食部位营养成分组成具有一定差异,本研究结果可为中华绒螯蟹建立质量标准和品质鉴定指标提供数据支持。
Approximate compositions,minerals,fatty acids,amino acids,nucleotides,and cholesterol were analyzed in muscle and testis of male Chinese mitten handed crab Eriocheir sinensis from different waters including Gucheng Lake of the Yangtze River,Yangcheng Lake,Liaohe River(estuary)and the Yellow River(middle and upper reaches)by biochemical analysis to evaluate nutrition quality of male Chinese mitten handed crab from different waters.It was found that there were significant differences in the composition of trace elements,amino acids and cholesterol in Chinese mitten handed crab from Gucheng Lake,Yangcheng Lake,Liaohe River(estuary)and the Yellow River(middle and upper reaches).There was significantly higher content(284.3 mg/kg)of iron in the testis in male crabs from Liaohe waters than that in the crab from the other waters(P<0.05),with significantly higher content(63.5 mg/kg)of zinc in the edible part of male crab from Gucheng Lake than that in the crabs from the other waters(P<0.05).The male crab from Gucheng Lake had significantly higher polyunsaturated fatty acid content in edible parts than that the crabs from the other waters did(P<0.05),with significantly higher amino acid contents(taste amino acids,essential amino acids and total amino acids)in the crabs from Gucheng Lake and Yangcheng Lake than those in the crabs from Liaohe and Yellow River(P<0.05).In addition,the contents of inosinic acid in testis of the crab from Liaohe River were more abundant,indicating that the nutrient compositions in the edible parts were varied with the sources of Chinese mitten handed crab.The findings provide support with data for the quality standards and identification indicators of Chinese mitten handed crab.
