散养对皖南三黄鸡生长性能及肉品质的影响 被引量:10

Effects of Free Range on Growth Performance and Meat Quality of Wannan Three-yellow Chicken

摘要 为探究散养对皖南三黄鸡生长性能和肉品质的影响,试验选择80羽4周龄、体重相近、健康无病的的皖南三黄鸡,随机分为笼养组和散养组,笼养组每只鸡单笼,每组40个重复。试验期9周。结果表明:6周龄时散养组体重高于笼养组(P<0.05),试验期散养组胫围高于笼养组(P<0.05);笼养组的肌肉滴水损失率、蒸煮损失率和失水率以及腿肌水分、粗脂肪含量和pH高于散养组(P<0.05);与散养鸡相比,笼养鸡生长速度较快,但散养鸡肌肉系水力高于笼养鸡(P<0.05),表明散养鸡肉品质优于笼养鸡。综上,生产者应该根据自身情况以及不同市场对鸡肉产品的不同要求选用适宜的饲养方式。 In order to explore the effect of different feeding methods on the growth performance and meat quality of Wannan three-yellow chicken,eighty 4-week-old Wannan three-yellow chicken,with close weight and healthy and disease-free body,were randomly divided into two treatment with cage rearing(control group)and free-range group(test group),40 repetitions for each group.Cage chickens and free-range chickens are guaranteed to start a 9-week experiment in April under the same feeding environment in Xinjiang and then tested the growth performance and meat quality of Wannan three-yellow chicken under free-range conditions.The results showed that,compared to the cage group,the 6-week weight of the free-range group was higher(P<0.05),with the increase in the age of feeding,the growth rate of the free-range group was slower than that of the cage group,and the shank girth of the free-rearing group was higher than that of the cage group(P<0.05).In terms of muscle quality,drip loss rate,cooking loss rate and water loss rate in the free-range group were lower than the cage group(P<0.05).While moisture,the content of crude fat and the pH value of leg muscle in the cage group were higher than that in the free-range group(P<0.05).Compared with free-range chickens,cage chickens grew faster,but the muscle strength of free-range chickens was higher than that of caged chickens(P<0.05),indicating that the quality of free-range chickens was better than that of caged chickens.Both feeding methods have their own advantages and disadvantages.Producers should choose appropriate feeding methods according to their own conditions and different requirements for chicken products in different markets.
