摘要
以浓香型大曲白酒生产工艺为例,对比其他类型白酒的原料、工艺等异同,针对酿造过程中的一些操作环节和关键控制点,提出一些见解,以期提高浓香型大曲酒的品质和降低生产成本,在未来的生产工艺中简化流程,增加企业和国民收入。
Taking the production process of Luzhou flavor liquor as an example,the similarities and differences of other types of raw materials,technology of liquor were compared with.Aiming at some operation steps and critical control points during the brewing process,some suggestions were put forward to improve the quality of Luzhou flavor liquor and reduce the production cost,simplify the process in the future production process,increase the enterprise and the nation income.
