摘要
果汁现已成为大众饮品,而我国是全球最大的浓缩果汁出口国,果汁的质量安全越来越受到关注。综述了影响果汁质量安全的主要因素,果汁质量控制技术研究进展,并对果汁质量控制研究方向作了展望。
Fruit juice has been the popular beverage,and China is the world’s largest exporter of concentrated fruit juice.There was growing concern about the quality and safety of fruit juices.The main factors affecting the quality and safety of fruit juice and research progress on juice quality control technology were summarized.The research direction of fruit juice quality control was also prospected.
