摘要
微生物在食品加工中应用领域广泛,列举食品加工中主要应用的微生物,并对其在传统发酵食品和现代食品加工中的应用进行综述,表明微生物学的进步促进食品加工行业的发展。
Micro -organisms have been used widely in food processing. The main micro -organisms in foodprocessing have been shown. Furthermore, the application of micro -organisms in traditional fermented andmodern food processing have been summarized. Then,the development of food processing have been promotedwith the advances in microbiology.
