摘要
质谱成像(MSI)是一种无目的和无标记化学成像技术,允许成千上万的分子分析数百个在一个单一的实验。在过去的二十年中,MSI已成为常见的药用,制药和植物研究社区,但已应用较少的食品科学研究。MSI作为一种新兴的"分子显微镜",为探索各种食品材料的时空信息提供了无可比拟的优势。使生物标志物的食物来源和真实性,营养物质或化学污染物影响人类健康的特点,在分子水平上的食物因素。文章主要研究MSI电离在食品安全学实验课程中的应用,通过研究MSI适合医学院校食品安全卫生学实验课程的教学工作,可以进一步推广实施。
Mass spectrometry imaging(MSI) is an aimless and unmarked chemical imaging technique that allows hundreds of thousands of molecular analysis in a single experiment. In the past twenty years, MSI has become a common medicinal, pharmaceutical and plant research community, but has been used in less food science research. As a new molecular microscope, MSI provides unparalleled advantages for exploring the temporal and spatial information of various food materials. The food source and authenticity of biomarkers, nutritional or chemical pollutants affecting human health, and food factors at the molecular level. This paper mainly studies the ionization of MSI in food safety engineering application in experiment course, through the study of MSI for experiment course of food safety and hygiene of medical college teaching work, can further promote the implementation.
