摘要
综述了荸荠皮的加工利用研究现状,主要包括以荸荠皮为原料生产果醋、果酒和饮料,从荸荠皮中提取棕色素、黄酮类物质和果胶等,以及荸荠皮提取物的抗氧化和抑菌活性,以期为高效利用荸荠皮资源提供基础资料和新思路。
This paper reviews the research status of the processing utilization of Eleocharis tuberosa peels, including the producing of fruit vinegar, wine and beverage, the extracting of brown pigment, flavonoids and pectin, and the antioxidant capacity and antimicrobial activity of Eleocharis tuberosa peel extracts. It aims to provide basic information and new ideas for the efficient use of Eleocharis tuberosa peels.
