摘要
以桑椹干果为原料,采用酸性乙醇为溶剂超声辅助提取桑椹干果中红色素.在单因素实验的基础上进行正交试验,分别考察乙醇体积分数、液料比、提取温度、提取时间等因素对红色素吸光度的影响.结果表明,超声辅助提取桑椹干果红色素的最佳工艺条件为:乙醇体积分数80%,用柠檬酸调节pH2.0,液料比20 m L/g,提取温度65℃,提取时间90 min.该工艺简单易操作,可以用于桑椹干果红色素的提取.
Red pigment from dried mulberry was extracted by acidic ethanol with ultrasound-assisted technology.The effects of the concentration of ethanol,the liquid-solid ratio,the time and temperature of extraction on the absorbance of red pigment were examined through orthogonal tests. The results have shown that the optimum technological conditions are as follows: the extraction solvent is 80% of ethanol,pH of 2. 0,the liquid-solid ratio 20( m L/g),the extraction temperature is at 65 ℃,and the extraction time is 90 min. This extraction process is rational and feasible,and can be used for the extraction of red pigment from dried mulberry.
