摘要
采用紫外分光光度法确定亚硝酸盐最佳吸收波长,并根据最佳吸收波长测定市面上随机抽取的火腿肠、榨菜和禽蛋类食品中亚硝酸盐的含量。测定结果表明,市面上随机选取的火腿肠类食品中亚硝酸盐的含量为6.12~15.6 mg/kg;禽蛋类食品中亚硝酸盐的含量为1.02~4.85 mg/kg;榨菜类食品中亚硝酸盐的含量为1.02~4.85 mg/kg。适量食用均不会影响人体健康。
By ultraviolet spectrophotometric method to determine the best absorption wavelength, and according to the best absorption wavelength determination of a random sample of sausage, pickle on the market and egg foods by nitrite content. The results show that the content of nitrite is in the range of 6.12-15.67 mg/kg, 1.02-4.85 mg/kg, 7.40-19.51 mg/kg in the ham sausages, egg foods and pickles.
