摘要
以水为提取剂,对鲜姜进行热水浸提,采用Folin-Ciocalteu法测定了鲜姜水提液中的多酚含量,同时利用清除DPPH·法和羟自由基(·OH)法评价了鲜姜水提液的抗氧化活性,并与常用抗氧化剂BHT进行了比较。实验结果表明:鲜姜水提液中多酚含量为11.69μg/mL,其对DPPH·和·OH的清除能力明显强于BHT溶液,鲜姜水提液具有较强的抗氧化活性。
Water is as extracting agent to perform the hot water extraction of fresh ginger, and the polyphenol content in extract solution is determined by Folin-Ciocalteu method. The antioxidant activity of polyphenol is evaluated by DPPH . and . OH scavenging method in comparison with antioxidant agent BHT. The results show that the yield of polyphenol in extract solution of fresh ginger reaches 11. 69 μg/mL, and the scavenging ability to DPPH . and . OH is significantly stronger than that of BHT solution, which demonstrates that the extract solution of fresh ginger possesses strong antioxidant activity.
