南宁市西乡塘区水街片区美食文化可持续发展研究 被引量:1

摘要 随着城市的发展,南宁水街已经被改造成现代气息浓厚的新街区,临街小吃店逐渐减少甚至消失,各种传统小吃搬离水街,散落南宁市各个街区。考察和调研南宁水街片区的美食现状,分析临街小吃店消亡、水街美食影响力下降、配套设施落后等问题产生的原因,提出把水街美食文化传承与发展列为"十三五"期间西乡塘区国民经济和社会发展的优先项目、规划打造水街世界美食城、依托南宁职业技术学院等高校科研院所打造水街美食传承和培训基地、制订水街美食地方标准、注册"水街美食"相关商标等对策,促进水街片区美食文化的可持续发展。 Urban development gradually transforms Nanning Shuijie into a block with strong modern flavors, where snack bars are thinning out with traditional snacks of various knds removed away and scattered in various blocks of Nanning. In light of investigations on catering culture in Shuijie of Xixiangtang District, and analyses of the reasons for extinction of snack bars, the declining impact of Shuijie gourmet foods and the backword of auxiliary facilities, the article suggests that inheritance and development of Shuijie gourmet culture be listed as the priority project for national economic and social development of Xixiangtang District during the 13th Five- Year Plan period, efforts be made, in reliance on scientific research institutions like NCVT, to develop Shuijie gourmet city, Shuijie gourmet inheritance and training base, and local standards for Shuijie gourmet, and register the Shuijie gourmet trademark with a view to further promoting the sustainable development of gourmet culture in Shuijie of Xixiangtang District.
