摘要
随着大众自我保健意识的日益增强,奇亚籽以其丰富的营养成分和健康功效而受到人们喜爱.奇亚籽学名叫芡欧鼠尾草,是我国正式批准的新食品原料,在很多发达国家备受青睐.因此,综述了奇亚籽营养成分、健康功效及其在食品工业中的应用现状等方面的研究进展,以期为奇亚籽相关产品的开发利用提供科学依据.
As the self-care consciousness gains its popularity among the public in China,Chia seed with its rich nutrient and healthy function and effect has gain the fondness of people. Chia,also known as Salvia hispanica L.,is officially approved as a new type of food ingredient in China and favored in many developed countries. In this paper we summarized the research development in its nutritional ingredients,health functions and its current application status in food industry in order to supply the scientific evidence for develop and utilize the products from Chia seed.
