摘要
以紫茄皮为试材,采用β-环糊精(β-CD)为辅助材料对其中的花青素进行提取,并与传统超声波法提取工艺进行比较。结果表明:通过正交实验确定最佳提取工艺是提取溶剂为95%乙醇与0.1%盐酸(1∶1),提取温度50℃,提取时间40min,加入β-CD量为3.0g。在此最佳提取的条件下,花青素的提取率可达8.34mg·g-1。
Taking the peels of purple eggplants as the main material,a new technique of anthocyanin extraction which adopted beta-cyclodextrin crystalline(β-CD)as the auxiliary material was described.It also analyzed the comparison between this new technique and the traditional ultrasonic extraction.The results showed that the optimal extraction conditions were the extractant 95%ethanol and 0.1% hydrochloric acid(1∶1),temperature 50℃,40 minutes andβ-CD3.0g.Under the optimized condition,the extraction yield of anthocyanidin was up to 8.34mg·g-1.
