摘要
茶多酚是一种天然的抗氧化剂,其在食品中应用广泛。综述了茶多酚的结构、在水产品中的应用、抗氧化机理以及茶多酚的改性研究,并展望了茶多酚的应用前景,为天然抗氧化剂茶多酚的开发利用提供理论支持。
Tea polyphenols is a kind of natural antioxidant,which is widely used in food. The constitution, application in aquatic products, antioxidative mechanism,modification of tea polyphenols were summarized and the application prospect was forecasted, which will provide theoretical support for development and utilization of natural antioxidant tea polyphenols.
