摘要
蜂蜜是一种营养丰富的天然食品,其具有多种生理活性,成为人们生活中常见的保健食品,因此其质量评价一直备受关注。蜂蜜质量的现行评价指标多数为常规性的理化参数,难以全面评价蜂蜜质量及区别蜜源。综述对国内外蜂蜜质量现行评价标准及涉及的检测方法进行了总结,并提出其他可能成为评价蜂蜜质量及鉴别蜜源的参数,为全面评价蜂蜜质量提出新途径。
Honey is a kind of natural food with rich nutrition. Because of a variety of pharmacological activity,honey becomes a common health food product in our daily life. So that the quality of honey always arouse more attention. Most indicators in the current honey's evaluating quality standards are regular physical-chemical parameters, which can hardly neither accurately assess the honey's quality nor distinguishing the nectar plant.In this paper, the current evaluatiing quality standard and detection method of honey at home and abroad has been summarized. At same time, puting forward some new potential quality control components to evaluate honey quality and identificate honey plants in the future.
