摘要
石碾米是稻谷去壳经石碾碾磨得到的大米,以市售的真空密封包装的石碾米为研究对象,研究了3个月内不同储藏温度下样品中细菌和霉菌的生长情况,以确定温度对石碾米产品储藏的影响。结果表明,随着时间的延长,微生物没有明显增多;随着温度的升高,微生物数量呈明显下降趋势。因此,储藏温度对真空密封包装的石碾米霉变没有较大影响。
The number of bacteria and mould in different storage temperature for three months were used to determine the effects of storage temperature on the vacuum sealed products of stone milled rice. The results showed that the number of microbes did not increase significantly with the time passing. It decreased obviously when the storage temperature increased. It is indicated that there was no special requirements for the storage temperature to prevent the mildew.
