摘要 目的:探讨超声波辅助水酶法提取油莎豆油的最佳提取工艺条件。方法:以油莎豆油提取率为考察指标,采用单因素筛选出超声提取的最佳条件,以最佳超声条件结合水酶法提取油莎豆油,在对各影响因素进行单因素试验的基础上,通过正交试验确定最佳提取工艺并进行验证试验。结果:最佳水酶法提取工艺条件为:料液比1∶8,pH 9.0,酶解温度55℃,酶解时间3 h,酶用量2.5%,超声功率240W,超声时间7min,在此条件下提取率为(94.78±0.22)%。结论:该方法提取条件温和,操作简单可行,为油莎豆油的进一步开发利用提供科学依据。 Objective: The research aimed to study the optimum extraction technique of Cyperus esculentus L oil with uhrasonic-assisted aqueous enzymatic method. Methods:Taking the oil extraction efficiency as the observation index, based on Single factor to select the best ultrasonic extraction conditions,with this combination of ultrasonic aqueous enzymatic ex- traction of Cyperus esculentus L oil, on the influence factors on the basis single of factor experiment to determine the optimum extraction by orthogonal test and verify it. Results: The optimum extracting conditions by aqueous enzymatic were showed as following: ratio of stuff to water 1:8, do sage of Alealase 2.5 %, temperature 55 ℃, time3 h, pH 9.0. the ultrasound irradia- tion at 240W, time 7min ,the oil extraction efficiency is (94.78 + 0.22 )%. Conclusion:This method extraction conditions was mild, appropriate and feasible,it provided scientific basis for the future research of Cyperus esculentus L.
