摘要
目的评价贵州城乡居民膳食脂肪和膳食纤维的摄入水平 ,为合理调整膳食结构 ,正确引导消费及预防营养过剩所致疾病提供科学依据。方法按经济及人口构成分层 ,随机抽取 8县市96 0个散居户共 40 13名进行膳食调查、体格检查及收入等社会经济因素调查 ,结果进行综合分析。结果城乡居民膳食结构不合理 ,经济收入对膳食营养素摄入有较大影响 ,城市及高经济收入人群膳热能及脂肪摄入过高 ,有高热能、高脂肪及低碳水化合物摄入倾向 ,以 45~ 6 0岁为重点人群 ,对健康不利。结论我省城市及高收入的部分成年人膳食营养素摄入及结构不合理 ,为有害健康的营养过剩型膳食 ,需进行营养干预。
Objective To evaluate the status of dietary fat and fiber among resident in urban and rural areas of Guizhou and to provide scientific information for adjusting dietary structure and guiding food consumption to prevent nutrition related diseases. Methods 4013 persons of 960 households in eight counties were selected randomly according to economical and population structure. Dietary survey, social economical survey and physical examination were conducted for comprehensive analysis. Results The dietary structure are irranonal among resident in urban and rural areas, the nutrient intake was affected by household income. Person in city and having high income groups have the higher intake of fat and energy, particularly for people of 45 to 60 years old. The tendency of high intake of Energy and fat combined by low intake of Carbohydrate are harm to good health. Conclusion The dietary nutrients intake and dietary structure are irrational among some adults in city and high income groups, intervention should be conducted for the over nutrition style diet for better health.
