不同群体固原鸡肌肉氨基酸及脂肪酸含量差异性测定 被引量:15

摘要 本研究以固原鸡3个群体(白羽、黑羽、麻羽)为研究对象,对其肌肉氨基酸和脂肪酸含量进行了系统测定、比较及分析。结果表明,固原鸡3个群体肌肉中氨基酸含量差异不显著(P>0.05),白羽氨基酸评分最高、麻羽最低;固原鸡3个群体肌肉中所检测出的24种脂肪酸,胸肌、腿肌差异均不显著(P>0.05),白羽肌肉脂肪酸组成最好。本研究所测定的固原鸡各项指标作为该品种性能标准,为今后的提纯复壮工作提供依据。 The amino acid and fatty acid in three different groups of Guyuan chicken were measured, compared and analyzed in this study. The results showed that the amino acid contents were not significant in these three different groups (P〉0.05), the white-feather chicken had the highest grade and partridge-feather chicken had the lowest content of amino acid. There were no significant difference in 24 kinds of fatty acid between breast muscle and leg muscle (P〉0.05), but white-feather chicken was the best in the composition of fatty acid. All indexes of Guyuan chicken measured in this study could be as the breed performance standards,providing the basis for purification and rejuvenation in the future.
