摘要
参考国内外相关标准或方法对南极磷虾油关键质量指标进行分析,并对其中的磷脂与虾青素含量的测定方法进行比较.结果表明:电感耦合等离子体原子发射光谱(ICP-AES)法测定南极磷虾油中磷脂含量较为真实可靠,为315.0~528.3 mg/g;HPLC法测定虾青素含量较分光光度法测定结果更为准确;南极磷虾油中EPA含量在11.90% ~ 28.13%之间,DHA含量在6.91%~13.70%之间,过氧化值为2.32 ~ 5.40 mmol/kg,碘值(Ⅰ)为120.79~156.84 g/100 g,重金属含量均符合相关国家标准规定.
The key quality indicators of Antarctic krill oil were analysed using relevant standards and methods at home and abroad, and several measuring methods of phospholipid and astaxanthin contents in krill oil were compared. The results showed that the phospholipid content determined by inductively cou- pled plasma atomic emission spectrometry (ICP- AES)method was more true and reliable, in the range of 315.0 -528.3 mg/g. Comparing with spectrophotometric method, astaxanthin content was more accu- rate by HPLC. The contents of EPA and DHA in Antarctic krill oil were 11.90% -28.13% and 6.91% - 13170% , respectively, peroxide values were 2.32 -5.40 mmol/kg, iodine values were in the range of 120.79 - 156.84 gI/100 g. The heavy metals contents in the oil were in compliance with relevant nation- al standards.
