基于酶解鸭肉和玉米复配制备营养粉的工艺优化 被引量:1

摘要 以鸭肉为原料,探究动物蛋白酶水解鸭肉的最佳工艺,并将鸭肉酶解液与玉米酶解液混合制备营养粉。在单因素试验的基础上,根据Box-Behnken中心组合试验设计原理,确定温度、pH值、加酶量、液料比4个因素为自变量,鸭肉蛋白水解度为响应值,设计响应面优化试验。结果表明:动物复合蛋白酶酶解鸭肉蛋白的最优条件为温度55.1℃,加酶量4.38%,液料比3∶1,pH 6.83,水解时间8h;在此条件下进行3次验证性试验,水解度为32.57%,说明该方案可行。将鸭肉酶解液与玉米酶解液按1∶1混合均质,经冷冻干燥后得到金黄色的营养粉。 Using duck as raw materials, the author explored the optimal process of animal protease proteolytic hydrolyzing duck , and mix enzymatic hydrolyzate of duck and corn to prepare nutrition powder. On the basis of single-factor test, according to the Box-Behnken central composite experimental design principle, the author selected temperature, pH, enzyme dosage and liquid material as independent variables, degree of duck meat protein as response value, to design response surface optimization test. The results showed that the optimal conditions for the animals compound protease enzymolysis the duck protein included temperature 55. I^C, the amount of enzyme 4. 38%, water-material ratio 3 = 1, pH 6. 83 and hydrolysis time 8 h; verifying in this condition for three times, the degree of hydrolysis was 32. 57%, indicating that the program was feasible. Mixing the enzymatic hydrolyzate of duck and corn with the ratio of 1 : 1 could get golden nutrition powder after lyophilization.
