Application of FTIR in analysis of edible oils and fats

摘要 综述了傅里叶变换红外光谱技术(FTIR)在食用油脂品种鉴定、掺假分析、理化指标、氧化产物、反式脂肪酸等的定性定量分析,以及在油脂氧化过程监测等方面的最新进展。随着FTIR相关硬件、软件的快速发展,FTIR快速、环保的优点将会得到更加有效和广泛的应用,逐步在油脂质量监控与加工生产领域替代传统方法。FTIR具有良好的发展前景。 The current research progress in application of Fourier transform infrared spectroscopy (FTIR) in rapid analysis of the authentication, detection of adulteration, determination of physical and chemical ini:lexes of edible oils and fats and the contents of oxidation products and trans fatty acids in oils and fats, as well as the monitoring of lipid, oxidation process were reviewed. With the rapid development of instruments, accessories and related hard ware of FTIR, it would be a promising method in the field of quality control and processing of edible oils and fats, as a substitute for the traditional chemical analysis methods.
