摘要
誉满三秦的流曲琼锅糖,承袭作坊式的生产工艺和经营模式,技术上口传心授,缺乏一定技术标准,产品质量参差,从而制约着琼锅糖产业的健康发展。以挖掘整理独具特色的琼锅糖的民间工艺,传承民间食品文化,推动"一村一品"工程为目的,总结了提炼传统琼锅糖生产工艺并提出改进建议。
Qiongguo sweet is popular in Shaanxi, but its quality is on various levels and lacks the technique standard for it is made by the way and operated by the model of the cottage industry and the technique is handed down by mouth. Just for these, its development is limited. The paper summarizes the technique and proposes some suggestions to improve the quality based on studying the folk arts of Qiongguo sweet and developing the local special product and putting forward the project of "one village, one special product".
