摘要
蚕卵、幼虫、蚕蛹、蚕蛾、蚕丝中含有丰富的氨基酸和多肽,是重要的蛋白质资源。研究蚕蛋白质资源的开发利用,对于解决蛋白质资源匮乏问题以及推动蚕丝业发展具有重要的意义。本文概述了蚕蛋白资源的研究现状,着重论述了其在食品工业中的应用现状,在此基础上提出了其开发利用策略。
Egg,larva,pupae,moth and silk of the silkworm are important protein resources,rich in amino acids,polypeptides and protein.It is meaningful to develop silkworm protein resources to meet protein shortage,improve economic and social benefits of sericulture.Combining the progress in our laboratory,the current research of silkworm protein have been summarized,especially the application situation in food industry.Based on this,proposals were put forward to the future exploitations.
