壳聚糖衍生物对香菇生物涂膜保鲜的研究 被引量:14

摘要 研究了水溶性壳聚糖衍生物———羧甲基壳聚糖(CMC)对香菇的保鲜效果,分别测定4℃贮藏期间香菇感官品质、失重率、呼吸强度、细胞膜透性、还原糖含量、Vc含量、丙二醛(MDA)含量、多酚氧化酶(PPO)活性等生理生化指标,并比较了与未经修饰的壳聚糖对香菇的保鲜效果。结果表明:CMC涂膜处理能有效降低香菇菇体的腐烂、变色;降低香菇的呼吸强度,细胞膜透性变小、MDA含量减少、降低失重率和PPO活力;同时还原糖含量和Vc含量明显降低缓慢;在4℃贮藏24 d仍保持较高的感官品质和营养品质。 The fresh-keeping effects of chitosan derivative--carboxymethyl chitosan(CMC) and chitosan coating on postharvest Lentinus edoes were investigated during storage. The indexes of sensory quality, weight loss percentage, respiration rate and cell membrane penetration, the contents of reducing sugar, malonaldehyde ( MDA), vitamin C and polyphenoloxidase activity were all analyzed at 4℃ storage. The results showed that CMC coating had the best preservatives effects on decaying inhibition and color change: CO2 respiration reduced, the penetration ability of cell membrane diminished, the content of malondialdehyde reduced, PPO activity and the rate of water loss reduced. Meanwhile, reducing sugar and Vc content reduced significantly. The sensor and nutrient quality were better if Lentinus edoes were kept at 4℃.
