摘要
综述了蛋白质的降解方法,包括酸水解、碱水解、酶解以及超声辅助水解,并分析比较了每种方法的优缺点。其次从检测方法的角度综述了蛋白降解产物-氨基酸的分析检测方法,包括化学分析法、电化学分析法和分光光度法。
Methods of protein degradation were summaried,including acid hydrolysis,alkaline hydrolysis,enzymatic and ultrasound-assisted hydrolysis,and comparing the advantages and disadvantages of each method.Then methods of amino acid detection were summaried from the angle of detection,including chemical analysis,electrochemical analysis and spectrophotometry.
