摘要
本文对荸荠活性成分与功能作用进行了系统的研究。研究表明,荸荠中存在的活性成分主要是黄酮类化合物、多酚类物质、多糖、甾醇、荸荠英等,因而使得荸荠具有抗菌、抗氧化、抗癌等作用。本研究希望能够为以荸荠为原料开发相关的保健食品或药品提供理论参考。
Systematically analysis is made on active ingredients and functions of Eleochairistoberosa in our county in this paper.The results show that Eleochairistoberosa has many functions because of its main active ingredients including flavonoids,polyphenols,polysaccharide,and sterols etc.It is deeply wished to offer some theoretical reference for developing related health foods or drugs.
