摘要
PVPP可吸附茶饮料中的部分茶多酚,延缓茶饮料冷后浑的发生,可以提高茶饮料的稳定性,延长贮藏期。本文综述了聚乙烯聚吡咯烷酮(PVPP)的结构和性能,并阐述了PVPP在茶饮料冷后浑的影响因素。
Tea polyphenol in tea beverage could be absorbed by Polyvinyl polypyrrolidone (PVPP), on its quality, it can improve the stability of tea beverage and extend the storage period. This paper comprehensively summed up the absorption mechanism and influencing factors of PVPP in tea beverage.
