为满足人们对营养保健饮料的需求和开发我国丰富的山药资源,在对山药和乳酸菌发酵食品的营养保健功能进行简单分析后,详细介绍乳酸菌发酵山药饮料、山药饮料、山药酸奶的加工工艺流程、操作要点和注意事项,为山药系列饮料的研制提供参考。
This article gives brief analysis on the health care functions of Rhizoma Dioscoreae and fermented food by lactic acid bacteria in order to meet people's requirement for nutritional and health care beverage and to develop China's rich dioscoreae resources. Tbe author presents in detail the processing techniques, operation points, and practical considerations in producing Rhizoma Dioscoreae beverage fermented by lactic acid bacteria, Rhizoma Dioscoreae beverage, and Rhizoma Dioscoreae yoghourt so as to provide reference for the production of Rhizoma Dioscoreae series beverage.
