摘要
[目的]测定不同产地紫参薯(Dioscorea alata Linn.)的营养成分,并将其与河南铁杆山药进行比较,旨在为其进一步开发应用奠定基础。[方法]以常规方法对不同产地紫参薯(浙江紫参薯、江西紫参薯、北京西郊农场紫参薯)的营养成分进行测定,并与2种河南铁杆山药品种(河南铁杆山药1、河南铁杆山药2)的营养成分进行对比。[结果]河南铁杆山药2的粗蛋白、粗纤维、铁、钾等含量丰富;河南铁杆山药1的脂肪、粗纤维、铜、钙、镁和硒等含量丰富;浙江紫参薯的铜、钙、锰、钾、葡萄糖和蔗糖等含量丰富;北京紫参薯的可溶性糖和可溶性酸、磷和硒等含量丰富;江西紫参薯的Vc、磷和硒等含量丰富。[结论]不同产地的山药在其营养成分中具有各自的优势。
[Objective]The aim was to determine the nutrient content in purple cultivar from Dioscovea alata Linn.produced in different regions and compare it to that of Henan Dioscorea oppositeThumb,so as to provide basis for its Furehur deveropment and utilization.[Method]The nutrient contents of purple D.alata L.from different places（Zhejiang,Jiangxi and the farmstead in west suburb of Beijing） were detected,and then compared with that of two varieties of Dioscorea opposite Thumb.in Henan Province（Henan D.opposite Thumb.1 and Henan D.opposite Thumb.2）.[Result]Henan D.opposite Thumb.2 had rich content of crude protein,crude fiber,Fe and k;while Henan D.opposite Thumb.1 was rich in fat,crude fiber,Cu,Ca,Mg and Se;the purple D.alata L.in Zhejiang had abundant Cu,Ca,Mn,K,glucose and sucrose;the purple D.alata L.in Beijing had abundant soluble sugar,soluble acid,K and Se;the purple D.alata L.in Jiangxi was rich in Vc,P and Se.[Conclusion]The D.opposite Thumb.from different places had their own advantages in the nutrient content.
