Sugar alcohol,which has the properties of lower calorie,no stimulating the secretion of insulin,alleviation of diabetes,prevention of obesity and decayed tooth,can be used as healthy and nutritious substitute of sugar.The physiochemical and physiological functional properties of several sugar alcohols are introduced as well as the application and prospect of sugar alcohols in food industry.
