摘要
嗜热链球菌作为一种益生菌,在发酵酸乳的过程中具有重要作用,并日益成为乳品科学研究的热点。目前在食品、药品等行业中的应用日益广泛。文中介绍了嗜热链球菌的发酵与保健功能特性,并对其开发应用前景进行了展望。
As a probiotic, Streptococcus thermopiles have important role in the fermentation of yogurt and thus become a hot research field of dairy science. The applications of Streptococcus thermopiles in food and medicine industry are more and more extensive. Its fermentation, healthy functions and the application prospects were discussed in this article.
