摘要
综述了国内外有关紫甘薯花色苷色素的研究进展,包括原料、色素提取和纯化方法、组分、含量测定、理化性质及生理学功能等,为该色素的进一步开发利用提供了参考。
The research progress about anthocyanin pigment in purple sweet potato in China and other countries was summarized,including raw material,pigments extraction and purification method,composition,content determination,physical and chemical properties and physiological function and so on,these supplied reference basis for further development and utilization of this pigment.
