摘要
为了开发地方优势资源,发展特色羊肉,在对麟游黑山羊分布区域、适应性及外貌特征调查研究的基础上,运用传统方法对体质量、体尺进行测定;通过对粗蛋白、粗脂肪和氨基酸的分析,及对嫩度、剪切力和肉色等的测定来评估麟游黑山羊的肉品品质。结果表明,麟游黑山羊适应性强,体格、生长速度均高于其他黑山羊品种,而且屠宰率和净肉率高,肉质细嫩,具有较高的开发利用价值。
To exploit the local advantage resources and to produce special goat meat,the geographical distribution,adaptability and appearance characteristics of Linyou black goats were investigated and their production performances were tested,including body weight,body length and meat quality evaluated by crude portein,crude fat,amino acids,tendrness,shear force and flesh-colored in our experiment.The results revealed that their adaptability,body size and growth rate were higher than that of other black goat species.There are also better performance on the carcass dressing percentage and pure meat percentage,especially the fresh and tender meat.In conclusion,Linyou black goat has good prospect for development and utilization in future.
